Healthy Game Day Super Bowl Recipes

Are you tired of eating junk food during your game day parties?  We put together a delicious mix of healthy options that your guests will love.  Follow these recipes to make delicious homemade tortilla chips, taco dip,  turkey sliders, and onion rings.

 Tortilla Chips

10 Corn tortillas
Sea Salt
Cooking spray ( I used coconut spray)

Pre-heat oven to 375 degrees

With a pizza cutter slice the tortillas into triangles
Line a cooking sheet with parchment paper and spray with cooking spray.
Arrange the tortillas on the sheet and spray with the cooking spray.
Bake for 10-15 minutes.
Remove and sprinkle with sea salt.

Taco Dip

2- 15 ounce cans (rinsed) or 2 cups of pinto beans (cooked)
1/4 cup veggie stock
2 avocadoes
8 ounces greek yogurt
1/2 teaspoon each of cayenne, chili powder, and garlic powder
1 lemon juiced
1 can sliced black olives
3 small tomatoes chopped
3 green onions chopped
1/2 red onion chopped
Cheddar cheese to top

In a large pan heat the beans until soft mash slightly add stock cook until refried bean looking
In a bowl mix greek yogurt and add seasonings you can make as spicy as you like
In another bowl mash avocado add the lemon juice and salt and pepper.
In a bowl or dish layer the bean mixture, the avocado, and the greek yogurt.  Then the green onions, red onion, tomatoes, olives and top with cheddar.
Serve cold.

mini turkey burgers
Turkey Sliders

Makes about 6 burgers1 pound ground turkey
1 cup bread crumbs
1 egg
1 tablesppon garlic powder
salt and pepper

Mix ingredients together and shape patties.
Heat a large pan cook burgers for about 7-8 minutes on each side until done through the middle.
Serve with your favorite toppings.

healthy onion rings

Onion Rings

Pre-heat oven 450 degrees 10-15 minutes

2 large onions (i used red but any onion will work)
Flour
Panko Bread crumbs
2 eggs

Thickly slice the onions
Put the flour egg and panko into separate bowls
Dredge the onions through the flour then the egg then the panko
Place on a parchment lined and cooking sprayed cookie sheet
Spray with cooking spray
Bake
