Valentines Day Yogurt Parfait and Pancake Breakfast

Wake your special someone up Valentines Day morning with this sexy, healthy, and delicious strawberry yogurt parfait and heart shaped pancake breakfast. Instead of adding artificial colors, simply add organic beets to color your pancakes red the natural way.
​Valentines Day Pancakes and Yogurt Parfait

Beet Puree Pancakes

Ditch the food coloring! Instead roast a couple of beets and puree to add to pancake mix to make red pancakes.

Pancake Mix

4 Cups all purpose flour 3 Tablespoons baking powder 2 Teaspoons baking soda 1 Teaspoon salt 3 Tablespoons sugar

To make pancakes

1 Cup mix 1 egg 1 Cup milk 1 Tablespoon melted butter or oil
Wrap beets in foil and roast at 425 degrees for an hour. Let cool pull off skin. Put beets in a food processor add water to achieve the consistency you want. Add 1/3 Cup of beet puree to the pancake mix add more to achieve the color you would like.

Yogurt Parfait with Strawberry and Granola

In a wide mouth jar or bowl add yogurt (make sure you read the ingredients to avoid added sugar and ingredients). Layer with granola of your choice. Then add berries. I used strawberries but feel free to use what you have or like.
